Do you believe in the power of food and following your gut? So do I.
I went for years with doctors telling me there was nothing wrong with my gut despite being in pain. In 2008 I began to feel better by following a gluten-free diet, and I learned a lot. In 2009, with the help of The University of Chicago Celiac Center, I was told I have non-celiac gluten sensitivity (NCGS). But now, having learned about new research in the HLA DQ6 gene (I am double DQ6), it appears that, after all this time, I do have celiac disease.
Before feeling better, I was in so much discomfort I could barely walk, and doing something as simple as shaking a person's hand caused pain. On top of the neuropathy, there was stomach pain, brain fog, fatigue, skin lesions and mouth sores, diarrhea (oh, the stories I could tell you), restless leg syndrome, skin disorders, and overmanigerial crankiness.
Because of this, I follow a strict gluten-free diet—not because I want to.
Because I have to.
Yet, while eating gluten-free helped, it wasn't enough. I kept suffering from gut issues—diverticulitis (including two hospitalizations), irritable bowel syndrome (IBS), systemic bacterial overgrowth (SIBO), and more.
I also live with multiple autoimmune disorders, including Sjogren's Disease.
I tried many diet protocols to feel better. Finally, after much trial and error, I found that The Specific Carbohydrate Diet works best for me.
In addition to SCD, I am a fan of intermittent fasting (IF). I find that when I use IF along with SCD, it makes my gut even happier, and it helps me manage Sjogren's.
I work as an independent contractor writer and editor through Time etc. I love family, friends, pets, writing, reading, cooking, baking, traveling, EATING, and having fun.
